A Few New Recipies

On mothers day we made homemade fresh cherry limeades from the Pioneer Woman’s recipe and they were really good.  I love the limeade from Firehouse, but making it fresh was way better and it made me feel good to know it was all fresh ingredients.

  • 2-liter bottle lemon-lime soda (used sprite)
  • 1 cup fresh squeezed lime juice
  • 1 cup sugar
  • One 10-ounce jar maraschino cherries, with juice
  • Thin lime slices

Chill all ingredients before mixing. (i didn’t do this and it was fine)When cold, combine the lemon-lime soda, lime juice, sugar, cherries with their juice and lime slices in a large pitcher and stir. Refrigerate for 30 minutes.

For Billy’s birthday I made an old fashion coca cola cake am I telling you this was the best cake I have ever had thus far!  If you are not a fan of nuts than you can leave them out and it will just be so soft, not too chocolaty and just sweet enough.  The best part about it is that the icing kind of crystallizes on top and it is oh so yummy.  The kids loved that it was made with soda and loved helping me make it (or shall I say liking the spoon and pan and anything else they could get their hands on).

Coca Cola Cake Recipe:

  • 2 cups self-rising flour
  • 2 cups sugar
  • 3 tablespoons cocoa
  • 1 cup Coca-Cola
  • 1 cup butter
  • 1 1/2 cups miniature marshmallows
  • 2 eggs, beaten
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

  • 1/2 cup butter
  • 1 tablespoon cocoa
  • 6 tablespoons Coca-Cola
  • 1 box confectioner’s sugar, (1pound)
  • 1/2 cup chopped pecans

Grease and flour a 9 x 13-inch pan and set aside. In a large bowl combine flour and sugar. In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. Combine the boiled mixture with the flour and sugar mixture.

In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture. Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.

Frosting: In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. Stir in the sugar and mix well. Stir in nuts. Spread over the cake while both cake and frosting are still warm.
Serves about 16.
