We have a tradition every year where we make these pumpkin cupcakes when it gets cool and then we pack up plates and take them around to the neighbors to wish them a happy fall. We made and delivered them yesterday, the kids had a blast and they turned out to be so moist and soft and yummy. My intention was to take some “in progress” photos but between baking and baby watching I only got a photo of the finished product! These are easy to make since you start off with a box mix and a great fall treat so here is the recipe if you want to try them:
1 box of spice cake mix (I have also used the carrot cake mix and that works too)
1/3 cup oil
1/3 cup water
1 package of vanilla instant pudding
Beat together for 2 min. or so and than pour into cupcake liners (i got my polka dot ones at Micheals). Follow baking instructions on box but bake for the least amount of minutes suggested.
Orange Cream Cheese Icing:
Cream together 1 stick of butter and I brick of cream cheese
Then add 4 cups and powdered sugar one at a time as you mix it slowly
Add 1 teaspoon vanilla and a few teaspoons of whole milk (one at a time) until you get the consistency you are looking for.
Add in some orange (or yellow and red) food coloring until you get the right shade of orange.
Topping it Off:
For the topping I made my own orange sprinkles. Just add some course sugar into a zip lock bag (i used raw sugar) and put a few drops of food coloring in it. Shake it until it is all combined and it is the color you want.
Then I iced the cakes, spread the sugar onto a paper plate and rolled them around coating the top of each cake. To finish I added 1/2 pretzel stick for the stem and a wedge of a green gummy that I sliced up for the leaf. And that’s it. Super cute and super good. Enjoy!
