Pumpkin Cookies (aka Pumpkin Pillows) with Cream Cheese Glaze

This recipe came with my husband.  I am pretty sure it was a 2 for 1 deal.  So every year I faithfully brake it out around thanksgiving and whip up a batch or 2.  The original recipe is a cookie recipe from my sweet mother in law, but these are not like cookies at all.  They are more like little pumpkin dough balls, hence the name pumpkin pillows. They are NOT good for you as they use Crisco, but since I only make them once a year i figure it is ok (at least that is what I am telling myself)!  They are super easy to make, pretty much just dump and mix.  I thought it would be nice to share it with you guys this year as my little Happy Thanksgiving to everyone!  I have also included the recipe I use for the glaze I put on top.  My husband prefers his with raisins and no glaze and the rest of us like them without raisins and with glaze.  So I make only a small amount of glaze to cover about half of the cookies (if you want to glaze them all than just double the recipe below).  Ok so here goes…

Cookie Ingredients:

  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1 can pumpkin puree
  • 1/2 cup butter flavored Crisco
  • 1 egg
  • raisins (optional)

Stir together all the dry ingredients then dump in the wet.  Mix on low speed until it is fully combined.  It will be a thick paste consistency.  Spoon onto a well greased cookie sheet (or line one with foil) and cook at 350 for 15 to 20 minutes.  And that’s it!

Cream Cheese Glaze:

Mix together 1/2 a block of cream cheese, 1/2 to 3/4 cup powdered sugar, and 2 tbls of milk.  Continue to whip until smooth and glossy looking.  Spoon over the cookies and your done.
